Big Jeff's Crockpot Lasagna


  • 2 lbs VITO'S (mild or robust)
  • 1 lb Lasagna noodles
  • 2 tbsp Butter
  • 1 tsp Salt
  • 1 cup Finely Chopped Onion
  • 45 oz Marinara Sauce
  • 10 oz Sliced Mushrooms
  • 24 oz Cottage Cheese
  • 6 cups Shredded Mozzarella Cheese
  • 1 tbsp Extra Virgin Olive Oil


  1. In a large pan, boil lasagna noodles with butter and salt until tender
  2. Saute chopped onion in olive oil in separate pan
  3. Add sausage to onion, crumble and brown
  4. In large mixing bowl, combine cottage cheese, mushrooms, 3 cups of cheese and marinara sauce
  5. Drain sausage/onion mixture and add to sauce mixture. Stir until well combined
  6. Cover bottom of a 5 quart removable stone crock pot with thin layer of sauce mixture
  7. Drain lasagna noodles. Place a layer of noodles in crock pot on sauce mixture
  8. Continue layering noodles and sauce mixture until crock pot is full or you are out of noodles and sauce
  9. Finish layering with sauce and top with remaining 3 cups of cheese
  10. Place in oven on broil at 500 degrees until cheese begins to brown
  11. Remove from oven and refrigerate until ready to cook
  12. Cook in crock pot on high for 3 hours or until center is hot
  13. Serves many
