Pasta Fazul


  • 1 package of VITO’S
  • 4-6 tbs olive oil
  • 4 cloves minced garlic
  • 1 chopped onion
  • 2 sliced/chopped carrots
  • ¼ cup chopped parsley
  • 2 tsp. dried basil
  • 1 tsp. dried oregano
  • 28 oz can diced tomatoes
  • two 16 oz cans navy beans
  • 1 lb. penne pasta
  • ¼ cup grated Parmesan cheese
  • salt / pepper to taste


  1. In skillet, steam and brown VITO’S, add olive oil if desired. Cut cooked links into 4 long strips and then into smaller pieces.
  2. While VITO’S is cooking, in a large skillet heat 2 tbs olive oil, add onion, carrot, garlic, parsley, basil, oregano and sauté until onions are tender.
  3. Stir in tomatoes plus ½ of juices. Season to taste with salt and pepper. Reduce heat to medium-low, cover, stir frequently for 10 minutes or until carrots are tender.
  4. Stir in navy beans, cover, simmer 20 minutes.
  5. Add VITO’S, stir, cover and simmer on low or turn off if you want.
  6. Cook pasta, drain and toss with 2 tbs olive oil and Parmesan cheese. Add pasta to the VITO’S mixture and mix.
