Smoked Surf and Turf


  • One package VITO'S robust or mild links
  • Local prawns or shrimp
  • 2 Green & Red peppers
  • 2 Onions
  • 2 Poblano peppers
  • Your favorite seasoning
  • Favorite pasta & sauce: pesto, tomato or olive oil
  • Small piece of cherry wood


  1. Remove the skin from the shrimp/prawns.
  2. Cut veggies into chunks that won't fall through the grill.
  3. Season the sea food and veggies to taste.
  4. Smoke the VITO'S and veggies, adding the shrimp at the end.
  5. Cook pasta.
  6. Combine smoked items with sauce in a bowl, toss together and serve on pasta.
